Although running Visual Studio in a VM is OK to start with, as you add more and more code it definately starts to creak a lot, and you end up doing everything in Xamarin Studio - which isnt such a great experience as VS (though not bad). I have become Xamarin certified through Xamarin university, and I use visual studio for both iOS and Android cross-platform app development with both full API Xamarin and Xamarin Forms. In my experience it was a good way to learn about the structure of an Android/iOS app, but if I were to do it over again, I'd just go native. You will do some troubleshooting of these kinds of problems, and they will be problems that are pretty much un-googleable. There is going to be some dissonance between what the first tool outputs and what the second tool expects, and those differences can manifest in bizarre ways.

The other problem I have with this whole type of solution is something I like to call "Ship in a bottle syndrome" where you're using a tool to build you something that you can use another tool on to get the final product. Plus there is a lot of security stuff to set up for iOS apps, but that's mostly Apple's fault. Oh, and you have to have one Mac per developer, the build server is chained to one PC. A process that is flaky at the best of times. You can do your development on a PC, but then you have to hook up a Mac build server and do remote builds with that. I've developed both iOS and Android apps with it, and iOS was by far the more problematic.
